Funfetti Sugar Cookie Cups with Vanilla Frosting - super easy and fun treat that looks adorable and tastes absolutely delicious!

Ingredients
- for the cookie cups:
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoon vanilla extract
- 1 and 3/4 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 1/2 cup funfetti
- for the frosting:
- 1/2 cup unsalted butter, softened to room temperature
- 3 to 3 ,5 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 Tablespoon heavy whipping cream (see note)
Preparation
Step 1
to make the cookie cups:
In a large mixing bowl, whisk together flour, baking soda, baking powder and salt.
In a large mixing bowl, mix together butter and sugar. Beat until light and fluffy, about 2 minutes.
Add egg and vanilla and mix well.
Add the dry ingredients all at once and mix for 5 seconds.
Add funfetti and mix the dough until the flour is incorporated. Do not overmix.
Chill the dough in the fridge for at least 2 hour, preferably overnight.
Preheat oven to 375 degrees F.
Spray a mini muffin pan with a baking spray.
Scoop the cookie dough with a small cookie scoop right into the cups of your muffin pan.
Bake cookies for 8 to 10 minutes ( 9 minutes was the magic number for me).
Cool for 5 minutes on the sheet. Transfer onto a wire rack to cool completely.
to make the frosting:
In a large mixing bowl, beat the butter with an electric mixer until creamy.
Add the powdered sugar (sifting through a sieve right over the bowl with butter), one cup at a time and mix in well.
Add vanilla and cream and beat 2 minutes.
Place the frosting into a piping bag and decorate the cookies.
Notes
The addition of heavy whipping cream in the frosting makes it extra light and fluffy. It is not necessary but highly recommended.
