Colorful Corn Salad

Ingredients

  • 2 (10 oz) pkg frozen corn, thawed
  • 2 c green pepper, diced
  • 2 c red pepper, diced
  • 2 c celery, diced
  • 1 c fresh parsley, minced
  • 1 c green onions, chopped
  • 1/2 c shredded Parmesan cheese
  • 2 tsp ground cumin
  • 1 to 1 1/2 tsp salt
  • 3/4 tsp pepper
  • 1/2 tsp hot pepper sauce
  • 1/8 tsp cayenne pepper
  • 3 T olive oil
  • 2 cloves garlic, minced
  • 6 T lime juice

Preparation

Step 1

In a large bowl, combine the first 12 ingredients. In a microwave-safe dish, combine the oil and garlic. Microwave, uncovered, on high for 30 seconds. Cool. Whisk in lime juice. Pour mixture over corn mixture and toss to coat. Cover and refrigerate until serving. Serves 16 to 18.
