Cheesy Tomato Potatoes

Ingredients

  • 2 lbs new small potatoes
  • 1 medium white onion
  • 1 tsp salt
  • 1/2 stick melted margarine
  • 1 cup grated monterey jack cheese
  • 1 cup grated cheddar cheese
  • 1 can rotel tomatoes with chilis
  • 8 oz sour cream
  • 4 slices of bacon, cooked and crumbled

Preparation

Step 1

Cut potatoes into very small pieces. Chop onion. Boil potatoes and
onion in salted water about 15min. Drain. Stir in butter, cheeses,
rotel tomatoes and sour cream. Transfer to lightly greased casserole
dish top with bacon and cheese. Heat in 350 degrees oven for 15-20min.
