{Semi} Homemade Moon Pies, Gluten Free & Allergy Friendly 1 Picture

Ingredients

  • 1 box of Enjoy Life Foods Vanilla Honey Graham Cookies
  • 2 cups of Enjoy Life Foods Dark Chocolate Morsels
  • 1/2 cup Marshmallow Creme/ Fluff (see blog post notes for allergy friendly varieties & homemade recipe links)
  • 4 Tablespoons of Coconut Oil

Preparation

Step 1

Line a baking sheet with parchment paper.
Each box contains 14 cookies, lay them out and spread approximately 1 TB of marshmallow creme/ fluff on half the cookies (seven).
Place the other half of the cookies on top creating a sandwich and place on the parchment lined baking sheet.
Let set - you can even pop them into the freezer to speed things along.
In a small-medium sized microwave bowl, add 2 TB of the coconut oil to 1 cup of the chocolate chips.
Heat in the microwave in 30 second increments, stirring in between, until melted and a semi-thick sauce has formed.
Allow to cool for 3-5 minutes before you begin to dip your cookies in the sauce.
Once you're ready, dip the cookie into the sauce, flip and then coat the other side. Repeat until all are covered in a first coat.
Allow to cool and shell to harden.
Make second batch of chocolate sauce by repeating steps above with remaining chips & oil.
After first coat has hardened, repeat process to give the Moon Pies a full covered coat on both sides.
Allow to harden again.
Serve & enjoy!
