Shrimp and Scallops with Wine and Vegetables

Ingredients

  • 1 pound uncooked medium shrimp in shells
  • 2 tablespoons olive oil
  • 1 clove garlic finely chopped
  • 2 medium green onions sliced
  • 1 tablespoon chopped parsley
  • 1 pound sea scallops cut in half
  • 1/2 cup chicken broth or white wine
  • 1 tablespoon lemon juice
  • 1/4 teaspoon red pepper flakes

Preparation

Step 1

Peel shrimp. Make a shallow cut lengthwise down back of each shrimp; wash out vein. Cover and refrigerate.

Heat oil in a 12-inch nonstick skillet over medium heat. Cook garlic, onion and parsley in oil about five minutes, stirring occasionally.

Stir in shrimp and remaining ingredients. Cook 4 to 5 minutes, stirring frequently, until shrimp are pink and firm and scallops are white.
