Ingredients
- 4 large eggs
- salt
- 1 T EVOO
- 1/4 t brown mustard seeds
- 1/8 t tumeric
- 2 green onion finely chopped
- 1/4 c diced plum tomato
- pepper

Preparation
Step 1
whisk eggs and salt. Heat oil in cast iron skillet over med heat add tumeric and seeds till they pop (30 secs) Add onions cook till soft , add tomatountil soft. add egg mixture. cook until set by lifting sides and making contact with pan.
