Poached Salmon Italiano

Ingredients

  • 1 tablespoon olive oil
  • 1 large garlic clove minced
  • 1/4 cup dry white wine or chicken broth
  • 4 6-ounce salmon fillets
  • 1 14.5-ounce can tomatoes with Italian herbs, undrained
  • 1/3 cup sliced olives black or green
  • 2 tablespoons chopped fresh basil

Preparation

Step 1

1. Heat oil in large skillet. Add garlic, saute 30 seconds. Add wine. Bring to boil.

2. Add salmon; cover. Reduce heat to medium; simmer 6 minutes.

3. Add undrained tomatoes and olives; simmer 2 minutes or until salmon flakes easily when tested with fork. Sprinkle with basil just before serving.
