Stir Fried Chicken and Vegetables

Ingredients

  • 1 pound chicken tenders cut into long, thin pieces
  • 2 tablespoons olive oil
  • 1 bundle asparagus spears cut into two inch pieces
  • 1/4 pound sliced mushrooms
  • 1/4 head cauliflower chopped
  • Broccoli chopped
  • 1/2 onion chopped
  • Salt and pepper to taste
  • Juice of two lemons

Preparation

Step 1

Heat oil in large pot. Add juice of one lemon. Add chicken, salt and pepper and cook until seared and cooked partially through, while stirring. Remove chicken to plate. Add vegies to pot and season with more salt pepper and lemon juice. Stir frequently to heat thoroughly. Cover for three minutes to cook the vegies.

When vegies are tender, add chicken again to reheat, but do not let vegies get too soft.
