Spanish Meatballs in Tomato Sauce

  • 1 bag costco frozen meatballs
  • 1 16-ounce can Italian plum tomatoes chopped
  • 2 tablespoons red wine
  • 2 teaspoons chopped fresh basil
  • 2 teaspoons chopped fresh rosemary

Step 1

Heat meatballs in olive oil in skillet or pan until browned on all sides. This takes several minutes, but keep watching them so they do not burn.

Add the tomatoes, wine, basil and rosemary. Simmer gently for around 20 minutes or until the meatballs are cooked. Season generously with salt and pepper and serve hot.

I like to make these a day or two ahead and let them marinate, cooked, in the refrigerator so they are more tasty. Then, warm them up slowly for about 30 minutes over low heat before guests arrive. Serve them in a warming/chafing dish.
