Herb and Lemon Goat Cheese Spread

Ingredients
- 5 ounces goat cheese room temperature
- 2 teaspoons fresh thyme
- 2 teaspoons grated lemon peel
- 1 garlic clove pressed
- 5 tablespoons olive oil
- French baguette sliced

Step 1
Place goat cheese in a small bowl. In another bowl, mix thyme, lemon peel and garlic. Season with black pepper. Mix half of the mixture into the goat cheese. Season with black pepper. Mix half of the mixture into the goat cheese. Add oil to the remaining half of thyme mixture.
Form cheese into a round disk and place in the center of a serving plate. Spoon oil-thyme mixture over cheese and surround cheese with baguette slices.
To mold the cheese, line a small mixing bowl with plastic wrap. Put the cheese in the bowl and press down. Wrap with more plastic and refrigerate. It will unmold very easily and it will look like a nice dome.
