Ingredients
- 2 Tbsps unsalted butter, melted
- 3 cups pitted sweet cherries, fresh, frozen or canned in water and drained (Bing cherries)
- 1/2 cup chocolate chips
- 4 eggs
- 1 cup milk
- 3/4 cup unbleached white flour
- 1 tsp pure vanilla extract
- 1/2 cup sugar
- 1/4 tsp ground cinnamon
- Confectioners’ sugar
Preparation
Step 1
Preheat the oven to 350 degrees. Lightly butter a 10-inch pie or tart pan with 1 Tbsp of the butter.
Arrange of the cherries and chocolate chips in the bottom of the pan.
In a blender, combine the remaining 1 Tbsp butter, eggs, milk, flour, vanilla, sugar and cinnamon. Whirl until smooth.
Pour the batter over the cherries and bake for 55 to 65 minutes until the clafouti is puffed and golden and a knife inserted in the center comes out clean.
Cool for at least 15 min. before dusting with confectioners’ sugar and serving. Serves 6-8
