White Bean and Barley Risotto

Ingredients

  • 1 onion, chopped
  • 2 T. olive oil
  • 2 1/2 c. beef broth
  • 1/2 c. barley
  • 15 oz. white beans
  • 1/4 c. parsley

Preparation

Step 1

In a large saucepan, heat olive oil. Add onion and cook until tender. Stir in broth and barley, bring to a boil. Reduce heat and simmer 30-40 minutes. Stir in beans and simmer for 5 minutes. Season with pepper, stir in parsley and serve.
