Traditional Monday Red Beans and Rice

Ingredients

  • 30 oz. red kidney beans
  • 3 celery ribs
  • 1 green bell pepper
  • 1 garlic clove
  • 1 onion
  • 2 T parsley flakes
  • 1/4 tsp. cayenne pepper
  • 15 oz. sausage
  • 2 c. white rice

Preparation

Step 1

Drain and rinse kidney beans.

Combine all ingredients in a large pot. Add enough water to partially cover ingredients. Simmer for about an hour. Stir occasionally.

Serve over rice.
