Ingredients
- 5 lb. potatoes, quartered
- 2 T. butter
- 8 oz. cream cheese
- 1 c. sour cream
- 2 tsp. salt
- 2 tsp. minced chives
- 1/4 c. Parmesan
- 1 tsp. paprika
Preparation
Step 1
Boil potatoes in water until tender. Drain potatoes and place in a large bowl. Mash with butter. In a small bowl, mix cream cheese, sour cream, salt and chives; add to potatoes.
Transfer potatoes in a 9x13 baking dish, coated with cooking spray. Sprinkle with Parmesan and paprika.Bake at 350 for 25 minutes.
