Roast Chicken with Balsamic Bell Peppers

Ingredients
- 5/8 t salt divided
- 3/4 t fennel seeds crushed
- 1/2 pepper
- 1/4 t garlic powder
- 1/4 t oregano
- 4 6 oz boneless skinless breasts
- 2 T EVOO, divided
- 2 c thinly sliced red pepper
- 1 c sliced yellow pepper
- 1/2 c thinkly sliced shallots
- 1 1/2 t chopped freah rosemary
- 1 c chicken broth
- 1 T balsamic vinegar

Step 1
Preheat oven to 450
Heat large skillet over med heat. combine 1/2 t salt, fennel, 1/4 t pepper, garlic powder, and oregano. Brush chicken with 21.5 t of oil and rub with spice mixture.
Add 1 1/2 t of oil to poan , swirl to coat. Add chicken and cook 3 minutes or until browned. turn chicken over and ciik an additional minute. Arrange chicken in coated baking dish. Bake for 10 minutes. Return pan to med heat add 1 T oil . Add peppers, shallots and rosemary. Saute 3 minutes. Reduce heat and simmer 5 minutes. Increase heat and add vinegar and salt and pepper.
