Salmon Crusted with Black Pepper

Ingredients

  • 2 Tbsp soy sauce
  • 1 Tbsp lemon juice
  • 1 Tbsp brown sugar
  • 1 clove garlic, minced
  • 3 Tbsp black pepper
  • 1-1/2 lbs fresh salmon, center cut, skinned and cut into 4 pieces
  • 1/4 cup olive oil

Preparation

Step 1

Pour soy sauce, lemon juice, garlic and sugar into a large zipper-top plastic bag, shake to blend. Put salmon into marinaide and close bag; refrigerate for 30 minutes.

Discard the marinade and pat fish dry. Sprinkle about 1 tsp black pepper onto each side of each piece os salmon. Heat oil in heavy skillet over medium-high heat. Saute salmon 2 minutes on each side for medium-rare. Remove salmon from skillet with slotted spatula and drain breifly on paper towels. Serve immediately.
