Ingredients
- 1/2 pound morels washed, trimmed, and cleaned
- 1 pound boneless skinless chicken breasts rinsed, patted dry
- Salt to taste
- Freshly-ground black pepper to taste
- 1 1/2 tablespoons extra-virgin olive oil divided
- 2 tablespoons chopped ramps - (to 3)
- 1/2 cup white wine
- 3 tablespoons butter

Step 1
Season the chicken with salt and pepper. In a sauté pan heat 1 tablespoon of olive oil and add the chicken breasts. To avoid crowding, sauté the chicken in batches. Cook the chicken until it's well browned on both sides, then remove. Be sure to keep it warm.
Using the same pan, add the remaining 1/2 tablespoon of olive oil. Add the morels and sauté for about three minutes. Add the ramps and continue cooking for another two minutes. Add the chicken back to the pan. Add the wine. Cover, and continue cooking at a simmer for about three minutes, or until the chicken is cooked through. Swirl in the butter and serve piping hot.
