Ingredients
- 4 T olive oil
- 1 1/2 lb. potatoes
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 1 onion
Preparation
Step 1
In a large nonstick skillet heat 3 T olive oil over medium high heat. Add potatoes (cut into 3/4 in. pieces), 1/2 tsp. salt, and pepper. Add remaining T of olive oil, stir in onion (chopped into 1/2 in pieces). Reduce heat to medium, cook, covered for 5 minutes, Uncover and cook, stirring frequently until potatoes and onions are browned. Toss with remaining salt and serve.
