Ingredients

  • 4 boneless center cut pork chop - pounded to 1/4 inch thickness
  • salt and pepper
  • 4 tablespoons all-purpose flour
  • 1 egg, beaten
  • 1 cup panko bread crumbs
  • 1 cup oil for frying, or as needed (NOTE: Try peanut oil)
  • garlic powder
  • ground ginger

Preparation

Step 1

1.Season the pork on both sides with salt and pepper. (NOTE: Be generous.)Place the flour, egg and panko crumbs into separate shallow dishes. Season the flour with salt, pepper, garlic powder, and ground ginger. (NOTE: Be generous with each spice to add extra flavor.) Coat the pork in flour, shaking off any excess. Dip it into the egg, and then press into the panko crumbs. Press on the cutlet to get a nice thick coating of panko. Flip and press on the other side then repeat with the rest of the cutlets.

2.Heat 3/4 to 1 inch of oil in a large skillet over medium heat. Once it reaches 340 degrees, place pork in the hot oil, and cook 4 - 5 minutes per side, or until golden brown. Let rest for 5 minutes before slicing.
