Baked Mashed Potatoes with Parmesan Cheese and Bread Crumbs

Ingredients
- 1 Tablespoon unsalted butter, plus 1/2 Cup (1 stick) unsalted butter, melted
- Salt
- 4 pounds russet potatoes, peeled and cut into 1-inch pieces
- 1 C whole milk, at room temperature
- 1 1/2 C shredded mozzarella cheese
- 1 C freshly grated parmesan cheese
- Freshly ground black pepper
- 2 Tablespoons dried plain bread crumbs

Step 1
1. Preheat the oven to 400F. Coat a 13 x 9 x 2-inch baking dish with the 1 tablespoon of butter. Bring a large pot of salted water to a boil and cook the potatoes until they are very tender, about 15 minutes. Drain; return the potatoes to the same pot and mash well.
2. Beat in the milk and melted butter; then mix in the mozzarella cheese and ¾ cup of the Parmesan cheese. Season to taste with salt and pepper. Transfer the potatoes to the prepared baking dish.
3. In a small bowl, stir together the bread crumbs and remaining ¼ C of Parmesan cheese. Sprinkle the bread crumb mixture over the mashed potatoes.
4. Bake uncovered until the topping is golden brown, about 20 minutes.
(This dish can be prepared to this point up to 6 hours ahead. Cover and chill. Bring back to room temperature before baking.)
