Potato Lentil Soup

Quick & easy, always a hit. The key to this recipe is the roasted pepper seasoning and the bouillon powder. You can substitute the minced turkey pepperoni sticks with all-beef minced bologna or anything else that might contribute to that sultry smokey flavour.

Ingredients

  • 1 Tbsp coconut oil
  • 1 onion, finely chopped
  • 3-4 Turkey pepperoni sticks, minced (optional)
  • 8 cups water
  • 8 tsp Harvest Sun Organic Veggie bouillon powder
  • 2 cups diced potatoes
  • 1/2 cup diced celery (or more)
  • 1/2 cup diced carrots (optional)
  • 2 cups red lentils
  • 1 Tbsp roasted pepper seasoning
  • Salt & Pepper to taste

Preparation

Step 1

Melt coconut oil in frying pan over medium heat.

Add onion & pepperoni sticks until toasted & fragrant (~ 8-10 mins).

Meanwhile, bring 8 cups water to a boil.

Add bouillon powder, potatoes, celery, carrots, lentils, seasonings & fried onion mixture.

Bring to boil & simmer over med-low heat for 20 mins.
