Baby Red Potato Salad

This potato salad is absolutely delicious, especially if you're not a fan of traditional potato salad loaded with mayonnaise. Red potatoes provide vitamin C, vitamin B6, potassium, iron, and dietary fiber. Eaten with their skins on, they are even higher in fiber.
I found this recipe from Paula Deen and was surprised to see a lighter recipe from her, but the ratings were 5 stars so I figured it had to be good! I modified it a bit further reduce the points, but you would never know. This potato salad is a keeper and got lots of kudos at my Father's Day luncheon.
Ingredients
- 4 cups baby red potatoes cut in small pieces
- 1/2 cup green pepper finely diced
- 1/4 cup red onion finely diced
- 3 scallions diced
- 1 teaspoon Dijon mustard
- 1 Tablespoon extra virgin olive oil
- 1 Tablespoon red wine vinegar
- 1 Tablespoon mayonnaise
- Salt and pepper
Preparation
Step 1
Boil potatoes in salted water until soft, approx 10 minutes. Drain and let cool.
While the potatoes are boiling, combine red onion, green pepper, mustard, olive oil, vinegar and mayonnaise and season with salt and pepper. Mix well and let the flavors marinade while the potatoes cook.
Once the potatoes are done and cool, mix into the bowl and add scallions and additional salt and pepper to taste. Serve room temperature or refrigerate until ready to serve.

This potato salad is EXCELLENT....took it to a bbq and it was a huge hit! Subbed the green peppers for red, and the green onions for chives, and the red onion for white and it was still wonderful! I used subs because this is what I had on hand. Also, I microwave my potatoes. Cut them up, salt them, put a bit of water on them, and hit the "fresh vegetable" button on my microwave. I just made this today and it is delicious!!!! I couldn't stop eating it. I am picky about my potato salad because most are too heavy, but this one is very light and has just enough mayonnaise. I also liked the dijon mustard in it. I will be making this again, everyone should try it.
This was delicious! I actually doubled the "sauce" part of the recipe. Used low fat mayo.

I made this and it was wonderful! Very easy, and still very tasty for being so much lighter than the traditional deli potato salad. I liked the ratio of potatoes to sauce; they were well-covered without totally swimming in it, so I would definitely suggest sticking to the measurements. It was a great side for a grilling out night.

Another winner! I made this for Memorial Day also and everyone loved it! My husband asked me if I could make it again tonight.
Made this for Memorial Day and it was a big hit. How great to be able to eat potato salad while following Weight Watchers! I didn't change a thing but might try adding some dill just to change it up a bit next time (although it certainly doesn't need to be changed...I just like to vary things from time to time). Be careful not to overcook potatoes. Gina's directions to cook for 10 minutes is perfect.
Made this for dinner tonight - with boca burgers. SO good! It totally felt like I was cheating on my diet. Will definitely make this one again! (p.s. - I'm not a green bell pepper fan, either, but I followed the recipe and it was perfect - the pepper flavor was very subtle and really complimented the other ingredients.)
Made this tonight with the slow cooker pulled pork and it was good but I wasn't blown away, until I added some dill. Then it was like a flavor explosion in my mouth!! I make a killer potato salad but it's just that, a "diet" killer! So this was a nice change. Great recipe! It's nice to have a recipe I don't feel guilty about. I was very skeptical about the sauce being enough to cover the potatoes and boy was I wrong. Never would have thought it would be enough. Just goes to show you learn something new every day!
Oh on a side note: I also boil a couple of cloves of garlic (coarsely chopped) with the potatoes, They help take out the "blah" flavor of the plain boiled potato =)
This was AWESOME!! I usually don't eat potato salad because I am not a big fan of mayo, but this was delicious!! The dijon mustard gave it such a great flavor, and the mayo was just the right amount!! LOVE, LOVE, LOVED IT!!
This is delicious! I made it tonight and the smell was amazing so I ate it as soon as it was cool enough. I realized while making it I didn't have any mayo so I used light sour cream and it gave it just a tiny bit of sweet/tangyness. The sauce is so light! I think I may make a dressing from it. I made this today and like it very much. The bell pepper flavors the dressing, so if you don't care for that flavor I would cut back on the amount of bell pepper used. The dressing is nice and tangy, definitely a new twist of mayonnaise dressings.
I made this today, and I am so pleased. I used celery rather than green pepper since that is what I had on hand. I will definitely be making this again!
I was wondering if you could substitute apple cider vinegar instead of using red wine vinegar. Would it drastically change the taste? I just don't feel like running to the store again! haha
