- 2 cups sifted flour
- 1 teaspoon salt
- 1 tablespoon sugar
- 3/4 cup shortening
- 1/4 cup ice water
- MAKES 2 SHELLS - FREEZE ONE
- FILLING
- 1 quart vanilla ice cream
- 1 cup canned pumpkin
- 3/4 cup granulated sugar
- 1/2 teaspoon salt
- 3/4 teaspoon pumpkin pie spice
- 1 cup heavy cream

Preparation
Step 1
Spread ice cream in one cooled pie shell. Place in freezer until hard. Blend together pumpkin, sugar, salt and spice. Fold in stiffly beaten cream and spread over ice cream. Freeze until ready to use. When serving cover with additional whipped cream and drizzle with following syrup
1/2 cup brown sugar
1/4 cup hot water
1/4 cup dark corn syrup
1/2 tsp vanilla
Boil sugar, syrup and water until it starts to thicken (don't let it get too thick) When cool add vanilla.
