Ingredients
- 8 Chicken thigh fillets
- 1 finely chopped onion
- 1 glove garlic, crushed
- 2 TBS butter
- 1/4 cup crunchy peanut butter
- 1/2 cup chicken stock
- 1/4 cup honey
- 1 ts grainy mustard
- 1 ts curry powder
- pinch cardamom
- dash tabasco
Preparation
Step 1
Trim chicken
Combine onion, butter, and garlic in microwavable dish. Cook on high 3 minutes.
Stir in honey, peanut butter, mustard, curry, stock, cardamom and tabasco.
Add chicken in a single layer.
Cook on high 6 minutes, turn chicken and cook on high 6 minutes longer. Serve with rice.
