Ingredients
- 1 lb. cottage cheese
- 1 (3 oz.) package cream cheese, softened
- 1/4 c. butter, melted
- 1/3 c. sugar
- 1/2 c. all-purpose flour
- 3 eggs, beaten
- 1 t. lemon juice
- 1/2 t. baking powder
- 1/2 t. ground cinnamon
- fruit topping or maple syrup
Preparation
Step 1
Heat oven to 350. Butter 8-in square pan. (if using glass lower temp to 325).
Place cottage cheese, cream cheese, butter and sugar in food processor; process 30 seconds or until smooth. Add flour, eggs, lemon juice, and baking powder; process several seconds or until smooth. Pour into pan. Sprinkle with cinnamon.
Bake 45 minutes or until top is puffed and springs back lightly when touched and edges are golden brown. Cool 5 minutes (center will sink when cooling.) Serve with warm fruit topping or maple syrup.
