Ingredients
- 4 tablespoons shortening
- 1 cup onion - chopped
- 2 cloves garlic - chopped fine
- 1 cup uncooked rice
- 2 cups cooked tomatoes
- 1 cup water
- 4 ounces (1 can) pimiento - chopped
- 1 teaspoon paprika
- 2 teaspoons salt
- 1/4 teaspoon pepper
Preparation
Step 1
Place shortening in skillet.
When hot, add onion and garlic and cook to light, golden brown.
Add rice, tomatoes, water, pimiento, and seasonings.
Stir until ingredients are well blended.
Cover.
When mixture reaches steaming point, reduce heat to simmer.
May be necessary to add more water.
Cook until mixture has thickened and rice is tender
