Macadamia Nut-Crusted Mahi Mahi

Ingredients
- 1/4 cup minced dry-roasted macadamia nuts
- 3 Tbsp panko bread crumbs
- 2 Tbsp unsweetened shredded coconut
- 1 Tbsp minced fresh cilantro
- Minced zest of 1 lime
- 1/2 tsp each, kosher salt and black pepper
- 1/4 cup light coconut milk
- 4 mahi mahi fillets, skinned (4-6 oz each)
- 1 Tbsp extra-virgin olive oil
Preparation
Step 1
Preheat oven to 400
Pulse nuts, panko, coconut, cilantro, zest, salt and pepper in a mini food processor; transfer to a shallow dish. Place coconut milk in a separate shallow dish.
Dip each fillet, top side down, into coconut milk, then dredge in crumb mixture; press to adhere.
Heat oil in a large overproof nonstick skillet over medium-high heat. Sear fillets in oil, crumb side down, until golden, about 3 minutes. Flip fillets, transfer skiller to oven, and roast until they flake easily when tested with a fork, about 7 minutes.
