Ingredients
- 8 garlic cloves
- 8 black peppercorns
- 2 tsp dried oregano
- 2 tbsp corn oil
- 2 tbsp cider vinegar
- 2 tbsp salt
- 1 5-1/2 to 6 pound pork shoulder
Preparation
Step 1
Combine first 6 ingredients in mortar and crush. Rub meat well with this "adobo." Let meat rest for at least 3 hours in refrigerator, or overnight if possible.
Preheat oven to 350. Bake pork shoulder in roasting pan for 3 to 3-1/2 hours, or until skin is very crispy, turning it every hour.
