  • 3 eggs
  • 2 cups sugar
  • 1 1/2 cups vegetable oil
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 cups chopped peeled apples
  • 1 cup coarsely chopped pecans
  • TOPPING
  • 1/2 cup butter or 1/2 cup margarine
  • 1/4 cup milk
  • 1 cup packed brown sugar
  • 1 pinch salt

Step 1

1 In a mixing bowl, beat eggs until foamy; gradually add sugar. Blend in oil and vanilla.
2 Combine flour, salt and baking soda; add to egg mixture. Stir in apples and pecans.
3 Pour into a greased 10-in. tube pan; bake at 350° for 1 hour and 15 minutes or until the cake tests done.
4 Cool in pan on a wire rack for 10 minutes.
5 Remove cake to a serving platter.
6 For topping, combine all ingredients in a saucepan; boil 3 minutes, stirring constantly.
7 Slowly pour over warm cake (some topping will run down onto the serving plate.).
