Caper Vinaigrette

Originally this was with a grilled asparagus recipe so it is very good drizzled over asparagus. It would also be good on just about anything else!!

Ingredients

  • 1/4 t salt
  • 1 T red wine vinegar
  • 1/2 t Dijon mustard
  • 1/4 t freshly ground black pepper
  • 1 garlic clove, minced
  • 2 T extra-virgin olive oil
  • 2 t capers, coarsely chopped

Preparation

Step 1

Combine salt, vinegar, mustard, pepper, and garlic. Stir with a whisk. Slowly pour in the olive oil stirring constantly with a whisk. Stir in capers.

Drizzle over whatever :)
