Salsa - Corn & Bean

Ingredients

  • dressing:
  • 1 can black beans - drained & rinsed
  • 1 can black eyed peas - drained & rinsed
  • 1 can shoepeg corn - drained & rinsed
  • 1 jar pimentos - drained, rinsed & chopped/ or 1 red pepper, chopped
  • 1 cup Vidalia onion- chopped
  • 1 cup celery - chopped
  • jalapenos - chopped - quantity as desired
  • 1/2 cup olive oil
  • 1/4 cup cider vinegar
  • 1/2 cup sugar

Preparation

Step 1

Place dressing ingredients in small pan, cook for 20 mins
Let cool slightly, pour over ingredients
Let sit for 3 hours or overnight, then drain & serve w/tortilla chips
