Cheescake Cupcakes

  • Topping:
  • 3 pkgs creamcheese
  • 1 cup sugar
  • 4 eggs
  • 1 1/2 teaspoon vanilla
  • 1 cup sour cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • add fruit slices to top if desired

Preparation

Step 1

Preheat oven to 325 and line 2 muffin tins with liners.

In a bowl cream the cream cheese then add the sugar and mix well, then add the eggs and vanilla and combine well.

Fill the cups halfway and bake about 25 minutes until set and golden brown.

Make the topping by combining all the ingredients and mixing well. Add the topping to the cupcakes and bake for another 5 minutes to make a glaze.

Remove cupcakes from oven and when you can take them out of the pan and let them completly cool on a cooling rack. Then transfer to the fridge where they will sit until ready to serve.
