Fiesta Chicken and Rice

Ingredients

  • 12 oz. skinless, boneless chicken breasts, cubed
  • 1 tbsp. vegetable oil
  • 1 can (14.5 oz) Del Monte Diced Tomatoes
  • 1 can (15.25 oz) Del Monte Whole Kernel Golden Sweet Corn, drained
  • 1 can (14.5 oz.) Del Monte Sliced Carots, drained
  • 2 tsps. chili powder
  • 1 tsp. ground cumin
  • 1 cup Collegge Inn Chicken Broth 99% fat free
  • 1 1/2 cups Minute Instant White Rice

Preparation

Step 1

Season chicken with garlic powder, salt and pepper, if desired.
Cook chicken in hot oil, inlarge skillet until no pink remains, about 5 mins.
Stir in undrained tomatoes, corn, carrots, chili powder, cumin and broth, bring to a boil.
Stir in rice, cover and simmer 5 mins. Remove from heat. Let stand 5 mins, stir before serving.
