Ingredients
- 12 oz. skinless, boneless chicken breasts, cubed
- 1 tbsp. vegetable oil
- 1 can (14.5 oz) Del Monte Diced Tomatoes
- 1 can (15.25 oz) Del Monte Whole Kernel Golden Sweet Corn, drained
- 1 can (14.5 oz.) Del Monte Sliced Carots, drained
- 2 tsps. chili powder
- 1 tsp. ground cumin
- 1 cup Collegge Inn Chicken Broth 99% fat free
- 1 1/2 cups Minute Instant White Rice
Preparation
Step 1
Season chicken with garlic powder, salt and pepper, if desired.
Cook chicken in hot oil, inlarge skillet until no pink remains, about 5 mins.
Stir in undrained tomatoes, corn, carrots, chili powder, cumin and broth, bring to a boil.
Stir in rice, cover and simmer 5 mins. Remove from heat. Let stand 5 mins, stir before serving.
