Tomato Pie

A great side dish for any meal, especially in the summer. Goes great with most meats.

Ingredients
- 1 baked pie crust
- 8-10 tomatoes - sliced and peeled
- 3/4 cup light mayo
- 3/4 cup parmesan cheese
- 1 sleeve Ritz crackers - crushed
- bacon bits
- fresh basil
Details
Preparation
Step 1
1. Fill the pie crust half full of the tomatoes
2. Then put desired bacon bits and basil
Repeat Steps 1 and 2
Topping:
1. mayo and parmesan - mix together
2. Ritz crackers go on last
Bake at 375 for 30-40 minutes until lightly browned
