Ingredients
- 1 - 20 oz pkg Simply Potatoes Shredded Hash Browns
- 1 med sweet yellow onion, finely diced
- 1 med green bell pepper, finely diced
- 1 cup red/yellow/orange bell pepper, finely diced
- 2 Tbls. southwest seasoning
- 2 cups finely shredded cheddar cheese
- Salt/pepper, to taste
- Olive oil cooking spray
- Salsa and sour cream, for serving
Preparation
Step 1
Toss all hash brown ingredients in large bowl. Preheat non-stick skillet on med-high heat. Spray with olive oil spray.
Add half of the hash brown mixture to hot pan and spread evenly over bottom of pan. Brown the potatoes on each side until deep golden brown, about 5-7 mins. Cheese will melt and form a crust; this is only oil you will need! Season to taste with salt/pepper. Repeat with other half.
Serve with salsa and sour cream, if desired.
