Cajun Shrimp and Rice

Ingredients

  • 1 tablespoon unsalted butter
  • 2 tablespoons extra-virgin olive oil
  • 3 cloves garlic, minced
  • 2 teaspoons Cajun seasoning
  • 1 pound large shrimp, peeled and deveined, tails intact
  • Kosher salt and freshly ground pepper
  • 4 plum tomatoes, chopped
  • 2 bunches scallions, chopped
  • 3 cups cooked white rice
  • 3 tablespoons chopped fresh parsley
  • Lemon wedges, for serving (optional)

Preparation

Step 1

Heat the butter, olive oil and garlic in a large skillet over medium-high heat until fragrant, about 1 minute. Add the Cajun seasoning and shrimp and cook, stirring, until the shrimp begin to curl, about 1 minute. Season with salt and pepper.

Add the tomatoes and scallions to the skillet and cook, stirring, about 1 minute. Add the rice and 1/4 cup water and continue to cook until the rice is warmed through and the shrimp are opaque, about 3 more minutes. Stir in the parsley and serve with lemon, if desired.

My family just loves this recipe. I did have to tone down the chili for them though. Other than that it is Perfecto.

My husband and I LOVED this recipe!!! I honestly think that if someone has never made paella before this recipe is a good way to practice and get your rice and seafood experience!

What an easy meal to prepare and delicious.

This recipe is AWESOME, declicious and easy to prepare. I wanted something different and was surprised of how easy it is to make. My husband likes very spicy food so it was easy to add extra cajun seasoning for his taste. I read some of the reviews and the turkey sausage is a bonus. I felt that it added more to the meal. I will make this ahead a time and take it camping with me.

I'm the only one in my family who likes shrimp, so I made this instead with some grilled chicken. It was wonderful. It was a very light taste initially but then there was a bit of a kick. It was a nice healthy meal that both of my kids ate happily and it was was easy to make.

A winner! Easy to prepare, very tasty! I followed the recipe and added a little curry, Did not have to add water because the tomatoes were juicy enough. The family loved it!

Wow! Hit a home run with this recipe. It was a desparate attempt to find something at the last minute for the classic 5:00 pm phone call . . . "Honey, I've invited (fill-in-the-blank) for dinner" Great flavor, super easy to make, lots of compliments.

I made this recipe doing one batch with chicken and one batch with shrimp. Both were wonderful. I also tried adding some andouille and that came out great. I will be making this often.

Really fast and good. Definitely use fresh shrimp if possible. I made Giada's rice toasted in butter and boiled with chicken broth which made a richer dish. Might try just plain cooked rice and a bit more cajun seasoning next time. Great combo of flavors, not sure what else could be added but will probably experiment.

My grandchildren request this receipe all the time. Have to double shrimp and rice since they can't get enough. Easy to make and not time consuming.

This is sooooo easy and quick to make! Husband likes!
