Ingredients

  • Puffs:
  • 1 stick butter
  • 1/4 teaspoon salt
  • 3 eggs
  • 1 cup flour
  • 1 cup hot water

  • Custard:
  • 3/4 cup sugar
  • 2 eggs
  • 1/4 teaspoon salt
  • 1 Tablespoon butter
  • 1/2 cup flour
  • 1 teaspoon vanilla
  • 2 cups scalded milk
  • 1/2 pint heavy cream

Preparation

Step 1

Cream Puffs:

Melt butter with salt and water. Bring to a boil, add flour all at once and stir. Cook until it leaves the sides of the pan. Remove from heat, cool and beat well. Drop on greased cookie sheet and put in preheated 450 degree oven for 10 minutes. Reduce heat to 400 and bake 25 minutes more, or until done. Insert sharp knife in puff to vent steam and cool. Fill with custard.

Custard:

Mix dry ingredients and slowly stir in hot milk. Mix well and cook in double boiler until thick. Cover and cook for 15 minutes. Add butter and remove from heat. Beat eggs and add hot custard, bit by bit, stirring, until it can be added to pan. Cook in double boiler for 2 more minutes. COOL and add vanilla. Whip cream and fold into COOLED custard. Fill puffs with the custard. Dust with powdered sugar if you like.
