    c fresh mint, minced

    c green onions, chopped

    tomatoes, peeled & chopped

  • 1/2

    c lemon juice

  • 1/4

    c OO

  • 2

  • Grd pepper to taste

Directions

Put wheat in bowl; pour water over; cover; let stand several hours or overnight until water is absorbed & wheat is tender & fluffy Put in strainer; shake off excess water Stir in vegetables & mint Mix lemon juice, oil, salt & Pepper; mix with wheat mix Serve cold
