Ingredients

  • 1 1/2 c bulgar wheat
  • 7 c boiling water
  • 1 c parsley, chopped
  • 1/4 c fresh mint, minced
  • 1/4 c green onions, chopped
  • 3 T bell pepper, chopped
  • 2 tomatoes, peeled & chopped
  • 1/2 c lemon juice
  • 1/4 c OO
  • 2 T salt
  • Grd pepper to taste

Preparation

Step 1

Put wheat in bowl; pour water over; cover; let stand several hours or overnight until water is absorbed & wheat is tender & fluffy
Put in strainer; shake off excess water
Stir in vegetables & mint
Mix lemon juice, oil, salt & Pepper; mix with wheat mix
Serve cold
