Zucchini Planks

Ingredients

  • 1/4 cup (50 mL) balsamic vinegar
  • 1/4 cup (50 mL) dry white wine
  • 2 tbsp (25 mL) soy sauce
  • 1 tbsp (15 mL) sesame oil
  • 2 tsp (10 mL) packed brown sugar
  • 1 tsp (5 mL) grated fresh ginger
  • 1 clove garlic, crushed
  • 3 medium zucchini

Preparation

Step 1

To prepare marinade, combine all ingredients except zucchini in a heavy zip-lock plastic bag; set aside.

Trim ends off zucchini. Slice zucchini lengthwise into 1/2 inch (1.25 cm) thick planks. Add zucchini to marinade and squeeze bag to coat zucchini with marinade; seal bag. Let stand for 30 minutes.

Remove zucchini from marinade; discard marinade. Grill zucchini over medium heat on barbecue until tender, about 4 to 5 minutes per side.
