Ingredients
- 3/4 cup dry pearl couscous (4 oz)
- 1 tsp. olive oil
- 3/4 cup water
- 2 Tbsp. chopped fresh oregano
- 1 Tbsp. chopped fresh mint
- Zest of 1/2 a lemon
- Salt and Pepper to taste
Preparation
Step 1
Saute couscous in oil in a saucepan over medium high heat until light brown, 2-3 minutes. Add water and cook according to package directions. Toss couscous with oregano, mint and zest; season with salt and pepper.
