Pan-Seared Shrimp Salad with Mango-Lime Dressing

Ingredients

  • 24 medium fresh or frozen shrimp
  • 1/3 cup olive oil
  • 3 T lemon juice
  • 1 T Old Bay seasoning
  • 1 T bottled cocktail sauce
  • 1/4 t garlic powder
  • 1 medium mango, halved, seeded, peeled, & cut up
  • 2 T honey
  • 2 T water
  • 1 T lime juice
  • 1 T red wine vinegar
  • 1/2 t poppy seeds
  • 1 - 8 oz. pkg. salad greens
  • 1 cup pecan halves and/or chopped pecans, toasted
  • 1/3 cup thinly sliced red onion

Preparation

Step 1

Thaw shrimp, if frozen. Peel and devein shrimp. Place a large resealable plastic bag in a shallow dish; add olive oil, lemon juice, Old Bay seasoning, cocktail sauce, and garlic powder. Add shrimp. Seal & turn bag to coat shrimp. Marinate in the refrigerator for 30 mins to 1 hour.

For dressing, in a blender or food processor combine mango, honey, water, lime juice, vinegar, and poppy seeds. Cover and blend or process until smooth. Divide greens among 4 serving plates. Top with pecans and onion rings.

Heat a large skillet over medium heat. Add shrimp and marinade to skillet. Cook & stir for 3 to 4 minutes or until shrimp are opaque. Spoon shrimp over greens. Drizzle with dressing.
