Bisquick Chicken'n Biscuits

Solve the midweek dinner dilemma with this cheesy chicken bake made with Bisquick mix and just five other ingredients.

Ingredients

  • 2 cups cut-up cooked chicken
  • 1 can (11 oz) Mexicorn whole kernel corn with red and green peppers, drained
  • 1 can (10 3/4 oz) condensed cream of chicken soup
  • 2 cups shredded Monterey Jack cheese (8 oz)

  • 1 2/3 cups Original Bisquick mix
  • 2/3 cup milk

Preparation

Step 1

Heat oven to 375 degrees.

In 8-inch square (2-quart) glass baking dish, mix chicken, corn, soup and cheese.

In medium bowl, stir Bisquick mix and milk with fork or wire whisk until soft dough forms. Place dough on surface dusted with Bisquick mix. Knead 10 times. Roll into 7 1/2-inch round, 1/2 inch thick. With 2 1/2-inch round cutter, cut 6 biscuits. Place on chicken mixture.

Bake 20 to 25 minutes or until biscuits are golden brown.

This is great- my husband and his teenage son both went back for more. I agree with those who suggest cooking the biscuits on the side and then putting them on, they didn't want to cook through on top of the casserole. I didn't need to add any extra soup, it was fine as it was. We all loved this, so I know what I'll be doing with leftover chicken from now on. So glad I found this recipe!

Had this last night and my husband kept going back for more. Did like others suggested and added more cream of chicken as well as cooked the biscuits on the side. This would be great as a potpie as well which is how we'll have it next time.

Fantastic. Did add half of a can of cream of mushroom soup as it looked a bit dry. I like to mix ingredients together and let them sit in the fridg to mesh together. Added the additional soup after taking the original recipe out of the fridg. Tasted just it's good heated up in the oven the next day.

My family loved it! I do believe you need to add another can of condensed soup, mine came out just a tad bit dry. Other than that, really tasty!

Was a hit in our home! Instead I just put Phillsbury biscuits on top however if you leave them on top they'll get soggy. So now we bake them on a separate cookie sheet.

I liked this recipe the night I made it for dinner, however, leftover I thought it was even better. I just did drop biscuits

We love this recipe at my house! I usually add extra veggies like peas and carrots. I also add a little more cheese and just drop the biscuits on top.

This is now a regular meal for our family, we love it! Alot of times we don't have enough leftover chicken on hand so I will cut up chicken breasts or tenders into bite size pieces and cook them in a skillet with some italian dressing. Only takes about 5-10 minutes, is delicious and also adds some more flavor. I also drop the bicuit mix on top and it works great!

I thought this casserole was delicious and very easy to make. Instead of rolling out the biscuit mix and cutting it into circles I just plopped spoonfuls of the dough onto the chicken mixture and spread them out a little. They cooked all the way through and it was much quicker.
