Chicken Kebabs with Nectarine Salsa

Ingredients

  • 1 tbls brown sugar
  • 1 tabls EVOO
  • 1 tbls fresh lime juice
  • 2 tsp chili powder
  • 1 tsp minced garlic
  • 1/2 tsp ground cumin
  • 1/2 tsp sea salt
  • 1/4 tsp pepper
  • 1 1/2 lb skinless, boneless chicken breasts cunt into 24 2 in pieces
  • Cooking spray
  • 2 c diced nectarines (apx 3)
  • 1/2 c diced red bell pepper
  • 1/4 c thinly sliced red onion
  • 2 tbls fresh basil leaves
  • 1 1/2 tbls fresh lime juice
  • 1/4 tsp sea salt

Preparation

Step 1

Pre-heat broiler or grill pan. Combine first 9 ingredients in a shallow dish, let stand 15 mins.

Thread 4 onion pieces and 3 chicken pieces alternately onto each of 8, 12 inch skewers (if wooden presoak in water for at least 30 mins). Place skeweres on broiler pan or grill pan (coated with cooking spray)

Broil or cook 12 mins or until chicken is done, turning occasionally.

For Salsa:

Combine nectarines with first 9 ingredients resting in shallow dish. Add last six ingredients. Toss and serve with kabobs.
