Ingredients
- 1 tsp + 2 Tbs butter divided
- 1 rib celery, chopped
- 1 red pepper, chopped
- 1 onion, chopped
- 1 clove of garlic, minced
- 3 cans (8 oz each) crab meat, drained
- 1/2 cup dry bread crumbs
- 3 egg whites
- 1 Tbs mayo
- 1 Tbs lime juice
- 1/2 tsp hot pepper sauce
- 1/4 tsp salt
- 1/8 tsp pepper
- 1/4 cup yellow cornmeal
Preparation
Step 1
In non stick skillet melt 1 tsp butter. Cook next 4 ingredients until tender. 5-8 minutes. Remove from heat and let cool slightly, In bowl combine vegetable mixture and next 8 ingredients. Form into 6 patties. Dip into cornmeal. In same skillet melt remaining 2 Tbs of butter over medium heat. Cook cakes until golden brown, about 8 minutes, turning once.
