Beef Enchiladas for 2

  • 1 lb beef
  • 1/2 cup chopped onion
  • 16 oz salsa
  • 2 c shredded mexican cheese
  • Taco seasoning mix
  • ..............................
  • 4 large size tortillas
  • Sour cream

Preparation

Step 1

Brown meat with onions and drain. Mix with 1/2 cup salsa, 1 cup cheese and the taco seasoning mix.

In 8-inch square pan put 1 cup salsa on bottom. Roll mixture into tortillas and place with seam side down. Spread remaining salsa (1/2 cup) on top and sprinkle remaining cheese (1 cup) over top.

Cover and bake at 350 degrees for 20-25 minutes, until hot and bubbly.

Top with sour cream and sliced green onions and serve Mexican rice on the side.
