Potato Chip Cookies

After all those Memorial Day BBQ's have ended, if you still have some leftover potato chips, try these Potato Chip Cookies. I mean, you don't want potato chips to go to waste, right? And chocolate is a necessity in every dessert, right? Have a great Memorial Day Weekend!
Ingredients
- 1/2 cup shortening
- 1/2 cup butter, softened
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 cups flour
- 1 teaspoon baking soda
- 2 cups crushed potato chips
- 1 cup semisweet chocolate chips
Preparation
Step 1
Preheat oven to 350°. Line baking sheets with parchment paper.
In a large mixing bowl, cream together shortening, butter, sugar and brown sugar until fluffy. Add eggs and vanilla until well combined. Mix in flour and baking soda until dough forms. Stir in potato chips and chocolate chips.
Drop by rounded spoonfuls onto prepared baking sheets about 2 inches apart. Bake for 10-12 minutes or until golden. Remove from oven and cool on wire racks before serving.
