BBQ Smoked Sea Scallops
Delicate sea scallops can be wood smoked on a BBQ with excellent results! We use an infrared Charbroil BBQ with indirect heat.
- 1 pound sea scallops
- 2 T clarified butter, room temperature
- 1 T seafood seasoning, such as Bay's
- Wood chips for the BBQ
Preparation time 10mins
Cooking time 30mins
Rinse the scallops and pat dry. Put into a bowl and mix in the seafood seasoning. Add the room temperature clarified butter and mix all together.
In the meantime, heat the BBQ on the right side to high (sear setting on the Charbroil). Put the wood chips in the bottom tray of the heated side. Place the scallops on the unheated left side on the upper rack of the BBQ and smoke for 20 minutes, rotating the scallops after 10 minutes to ensure even cooking. Serve immediately.
I also cook vegetables at the same time by placing them on the upper rack of the BBQ on the heated side for 10 - 15 minutes.
