Ingredients
- Crust
- 1 cup all-purpose flour
- 1/2 cup LAND O LAKES® Butter, softened
- 2 tablespoons sugarFilling
- 1/2 cup firmly packed brown sugar
- 2 eggs
- 1/2 teaspoon salt
- 1/2 teaspoon rum extract
- 3/4 cup sweetened flaked coconut
- 1/2 cup macadamia nuts, chopped
- 1 (8-ounce) can crushed pineapple in juice, well-drained, reserve juiceGlaze
- 1 cup powdered sugar
- 1/2 teaspoon rum extract
- 4 to 6 teaspoons reserved pineapple juice

Step 1
Heat oven to 350°F. Combine flour, butter and sugar in small bowl. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs. Press onto bottom of ungreased 8-inch square baking pan. Bake for 12 to 17 minutes or until set but not brown.
Meanwhile, combine brown sugar, eggs, salt and 1/2 teaspoon rum extract in same bowl. Beat at medium speed, scraping bowl often, until well mixed. Stir in coconut, nuts and pineapple. Spread over hot, partially baked crust.
Bake for 25 to 30 minutes or until lightly browned and filling is set. Cool completely.
Combine sugar, rum extract and enough pineapple juice for desired glazing consistency in small bowl. Drizzle over cooled bars; cut into bars.
