Tortilla Soup

Ingredients

  • 2-1/2 c. chicken broth
  • 1 can (14-1/2 oz.) whole peeled tomatoes, chopped, with their juice
  • 1 can (4 oz.) chopped green chilis, drained
  • 1 med. onion, chopped
  • 1 c. diced cooked chicken
  • 1/2 tsp. ground cumin
  • Tortilla Chips
  • Grated Monterey Jack Cheese

Preparation

Step 1

In a medium saucepan, combine all ingredients except chips and cheese. Bring to a boil and simmer, stirring occasionally, for 8 minutes. Spoon into serving bowls & serve with tortilla chips and cheese.
