New Mexican Chicken Soup

Ingredients

  • 1/2 lb. dice chicken breasts, boneless, skinless
  • 3-4 green onions, chopped
  • 1 cup mushrooms, sliced
  • 1/4 cup tequila
  • 4 cups chicken broth
  • 1/2 tea. dried red chile flakes
  • 4 cups water
  • 1/2 head cabbage, shredded
  • 2 carrots, diced
  • 4 potatoes, peeled, diced
  • 1 Tbsp. fresh parsley
  • 1/2 tea, pepper
  • 1/4 tea. ground ginger

Preparation

Step 1

Put the chicken, mushrooms, tequila, 2 cups water, and red chile flakes in a saucepan and cook for 30 minutes. Add the rest of the ingredients and cook for another 30 minutes.

Serves 4-6
